Men men - Corn grains that embody the soul of highland cuisine

In the arid rocky slopes of Ha Giang, where rice struggles to grow, corn has become the main food source sustaining many generations. From the precious corn grains harvested from those rocky fields, the H'Mong people have created a simple yet profound dish: men men.

Without elaborate spices or complicated preparation, men men carries the rich flavor of corn, the smokiness of the kitchen, and the resilience of the highland people.

1. Men men – When corn is not just food

For people in the lowlands, corn can be a snack, boiled dish, or grilled food. But for the H'Mong people on the rocky highlands, corn is the primary source of life. In the barren fields where rice cannot be cultivated, corn still takes root and rises among the stones.

Men men – in Quan Hoa dialect means steamed corn flour – has accompanied the H'Mong people through countless seasons of farming, through cold days and early morning markets.

After the harvest season, corn grains are:

  • Dried on the kitchen loft
  • Hung on the porch to avoid moisture
  • Stored for use throughout the year

Only the local glutinous corn variety of Ha Giang produces the characteristic aroma and richness that hybrid corn from other places struggles to achieve.

2. The process of making men men – Meticulous like weaving fabric

To have a pot of delicious men men, H'Mong women must go through many stages – each step requires experience and patience.

2.1 Grinding corn with a stone mortar

The corn is separated from the core, selecting firm grains and discarding moldy ones. Then it is ground using a traditional stone mortar – two heavy stone slabs stacked on top of each other.

The corn must be ground to remove the husk first, then ground further into fine flour. This step requires the most effort, but it also determines the fineness of the men men.

The flour after grinding is:

  • Carefully sifted to remove husks and stones
  • Mixed with just enough water – not too dry, not too wet

2.2 Steaming twice – The secret to fluffy men men

The corn flour is placed in a wooden steamer set over a large pot of water.

  • First steaming: to moisten and partially cook
  • Then poured onto a tray and fluffed
  • Mixed with a little more water
  • Steamed a second time for the flour to be fully cooked

After two rounds of steaming, men men achieves a fluffy – airy – rich texture – without clumping. The entire process takes about 2–3 hours, so many families have to wake up at 4–5 AM to bring men men to the market on time.

3. The flavor that deepens with each bite

When cooked, men men has a light aroma of corn, with a natural sweet richness. The first time eating it, many find it dry and hard to swallow. But when chewed slowly, you will feel the sweetness gradually spreading in the throat.

The H'Mong people often eat men men with:

  • Vegetable soup
  • Fried tofu
  • Served with sauce
  • Or with roasted chili – the spicier, the warmer in the cold weather
