Cao Bằng vermicelli is made entirely from the dong riềng tuber – a type of plant widely grown in mountainous areas with a cool climate and fertile soil. Thanks to the favorable natural conditions, the dong riềng tubers here yield a high amount of clean and fragrant starch, much more than in many other regions, thus creating a uniquely special quality of vermicelli.

The process of making dong vermicelli is quite elaborate and requires a lot of effort. The dong tubers, after being harvested, are washed clean, ground to extract the starch, carefully filtered multiple times, then dried and pressed into strands. The entire process almost retains its natural state, without mixing in impurities or using bleaching agents, so the vermicelli strands have a characteristic brown-gray color instead of the glossy white of many industrial vermicelli types.

The most outstanding feature of Cao Bằng vermicelli is its naturally chewy texture, which does not break when cooked for a long time, has a light crunch, and a very unique aroma. When soaked in water, the vermicelli expands evenly but still maintains its firmness. Whether used for soups, stir-fries, salads, or hot pot, the vermicelli retains its delicious flavor and appealing texture.
