BED RICE PORRIDGE – A RURAL DISH, THE LOVE OF THE PEOPLE OF QUANG
Not high-end, not elaborate, bed rice porridge, a rustic dish of the Quang Tri people – has an oddly captivating appeal for those who have ever tasted it.
The name sounds strange, but in fact, it is very familiar. “Bed edge” is how the ancients likened the thin, flat rice noodle, cut long like the edge of a bamboo bed. Rice flour is finely ground, spread thin, and then evenly sliced, when cooked it is soft yet retains a slight chewiness, fragrant with the smell of fresh rice.
A bowl of rural bed rice porridge must not lack a bit of roasted ginger, scallions, and spicy pepper powder. When pouring in the clear, steaming broth, everything blends into a sweet, warm flavor that comforts the stomach on chilly days.
